This tray bake takes a few basic ingredients and about five minutes of active time to make a delicious family meal. Serve it with pasta or a few hunks of good bread.

Ingredients

  • 1 head broccoli, cut into florets

  • 12 cherry tomatoes

  • 3 tbsp olive oil

  • salt and pepper, to season

  • 6 good-quality Italian-style pork sausages

  • ½ tsp chilli flakes

  • freshly grated parmesan, to serve

  • lemon wedges, to serve

Method

  1. Step 1

    Heat your oven to 200C fan-forced (220C conventional). Line a baking tray with baking paper and place the broccoli florets and tomatoes on the tray. Drizzle with olive oil and season well with salt and pepper, then spread the broccoli and tomatoes out so that they are quite separate on the tray.

  2. Step 2

    Squeeze the filling from the sausages into little meatballs, or snip them into short lengths with scissors and place around the tray in all the spaces. Scatter with chilli flakes. Bake for 30 minutes, then grate over parmesan and squeeze over lemon to serve.
